haha, made you look!

Take a look at this:

5 pounds!!!???  …yeah, I wish! 🙂

I got sick this weekend & I took this picture in the midst of things. I commented last week on Teresa’s weigh-in picture about how I would like to lose some water weight. Ta-dah! Take this as a cautionary tale and “be careful what you wish for!”

So let’s move on to the real, Tuesday morning weigh-in picture:

2 pounds. Not quite the 5 lbs of Saturday but I’ll take it!

I’ve been cooking more the last several days and that is going pretty well. This isn’t to say it’s not tempting to eat something quick & easy (I miss you microwave) but, if I plan a little, I can make something healthier. So far I’ve made chicken noodle soup, chicken fajitas w/ whole wheat tortillas & some roasted potatoes/onions/squash. Pretty good for a non-cooking type like myself (and pretty tasty too!)

Next on the menu:

  • baked chicken &  squash (I have many yellow crooknecks hanging out in the fridge)
  • pasta w/ a veg heavy marinara (I also have a lot of tomatoes)
  • corn on the cob (tis the season)
  • a small steak, rice & tomatoes (a favorite childhood dish)

p.s.  I need ideas for what I can cook using fresh vegi’s. It helps if they are easy, fast and do not have mushrooms or other icky ingredients 😉

  2. Any recipe using veggies I have is heavy on butter, mayo, or cream sauce. How else do you make them eatable? Just joking. Dad made mixed veggies with tiny bow tie pasta the other day that was delicious. Of course the pasta is probably a no-no.

  4. Pitas! I use alot of veggies in Pita pockets. They have whole wheat ones at Lee’s. If you like Hummus I put Hummus and veggies in a pita for a quick tasty lunch.

  5. Good job Karen! One thing I do with veggies is steam them in a handy-dandy baby steamer pot I got at Kitchen Kneads a few years ago and then spray them with “I Can’t Believe It’s Not Butter” spray and sprinkle a little bit of salt and some pepper on them….fast, easy, filling, and pretty good. My favorite combo is carrots, broccoli, and corn, but you can of course use whatever vegetables you like best. Squash would be yummy…yellow or zucchini. Yum.

  6. Good plan! Try going to allrecipes.com and type in certain veggies you want to use… I have found some good ones that way.

  7. That’s right. You make that killer carrot & hazelnut salad that I still dream about. I’ll have to add it and allrecipies to my list!

  8. My favorite veggies are raw and crunchy! (their prep not their names) Jerry likes to dip his veggies in fruit yogurt. His fav, for example, is spears of cucumbers in boysenberry western fam yogurt. Delicious! Try some new raw vegs for variety – maybe those parsnips are an acquired taste. I like the stems of broccoli with the tough outer peels stripped away to reveal tender goodness. I tried hicama (sp?) recently and decided i liked it. Jerry discovered that green peppers are tasty raw. (with a tic tac chaser, of course!) Browse the closer-to-campus Lee’s for more exotic selections. Enjoy!
